Saltines or lightly salted Matzo crackers
10 ounces or more sharp cheddar cheese
Cayenne pepper
Salt flakes, optional
Heat oven to 450 degrees F.
Place crackers 1 layer deep on a rimmed baking sheet. Spread grated cheese over the top. Sprinkle with optional cayenne or other herbs or seasonings. If you are using Matzo instead of Saltines, you may want to add a bit of flaked salt.
Put the crackers in the hot oven. Turn the oven off immediately and let the crackers sit for 4 hours minimum, or overnight.
Break crackers apart and serve.
