2 cups stale bread, cut in 1/2-inch cubes
2 medium apples, unpeeled, cubed
2 eggs
1/4 cup sugar
2 cups milk
1 tsp vanilla
1/2 tsp ground cinnamon
Preheat oven to 350°. Butter a 6-cup casserole dish.
Beat eggs and sugar together until foamy. Add milk, vanilla and cinnamon. Stir well. Add bread and apples and stir to combine. Place in casserole dish.
Bake on the middle shelf of an oven for 50-60 minutes, or until the pudding is slightly puffed and set.
Serve warm or cold with caramel sauce.
