Atole

1/4 cup masa harina
1 1/2 cups water
1/2 cup non-sweetened milk or soymilk
1 – 2 tbsp dark brown sugar
1/2 tsp cinnamon
1/2 tsp vanilla extract
pinch of salt

Mix liquids slowly into masa harina, stirring well. Add sugar and optional salt. Cook over low heat, stirring often. Bring to a low boil. Simmer about 10 minutes, until thick.

Add cinnamon and vanilla extract.

This is a drinkable corn beverage, served warm. Some recipes call for all milk and no water. 1 tbsp brown sugar is enough. 2 tbsp is delicious!
