3 cups cooked rice [1 cup uncooked rice, 2 cups water, salt]
3 eggs
1/3 cup sugar
2 cups milk
1 1/2 tsp vanilla extract
3/4 cup raisins
1 tbsp butter
3/4 tsp salt
2 tsp lemon juice
1/2 tsp finely chopped lemon zest
Mix everything together. Bake at 325° for 40 minutes to an hour or more, depending on the temperature of the combined ingredients. (Grease the dish, and use a hot water bath.)
