Balsamic Fig Vanilla Salad Dressing

120 grams dried Black Mission figs
120 grams water
1/4 – 1/2 cup balsamic vinegar
3/4 tsp salt
vanilla bean paste, or vanilla extract to taste (1/2 tsp?)

Chop the dried figs and place them in a 2-cup pyrex measuring cup. Add water to cover. Microwave on high until they come to a boil. Let cool and store in the refrigerator until you are ready to prepare the dressing.

Pulse with an immersion blender under smooth. Add salt and blend well. Add balsamic vinegar to taste. Add vanilla to taste.

Keep refrigerated.

Makes approximately 1 cup.

Note: some recipes call for a bit of Dijon mustard. Could be interesting?
