Bread Pudding with Chocolate and Orange

Makes an 8″ round dessert.

1 tbsp butter, for greasing a pan
3 large eggs
1/3 cup sugar
1 1/2 cups whole milk, or milk combination
2 tbsp Grand Marnier (perhaps skip this, not sure it adds much)
1 tsp frozen orange juice concentrate
1 tbsp grated orange or lemon rind
8 ounces cubed white bread, crusts removed
2 ounces chopped dark chocolate (I used Theo Dark Chocolate with Orange)

Butter the pan generously. Preheat oven to 350°.

Whisk egg and sugar together, until it turns pale yellow, about a minute. Add the milk, Grand Marnier, frozen concentrate, and zest.

Add the cubed bread to the liquid and let it soak for a bit.

Layer half of the pudding in the prepared pan, then top with half the chopped chocolate; repeat.

Bake for 30 – 35 minutes, until puffed and center tests done.
