French Toast

8 eggs
2 cups unsweetened soy milk
cinnamon
salt
thick-cut French bread (1.25″ approx)

Blend eggs and milk with an immersion blender. Add salt to taste.

Soak bread through. Sprinkle with cinnamon. Fry on a hot non-stick griddle. Keep the heat low enough that the middle gets cooked without the outside burning. The exterior should be slightly crisp; the interior creamy.
