Rich Dinner Rolls in one hour

3 cups unbleached flour
2 tbsp sugar
3/4 tsp salt
5 tsp quick dry yeast
2 tbsp butter
2 large eggs
3/4 cup hot tap water
Sesame seeds or poppy seeds

Add yeast to water with a pinch of sugar. Combine dry ingredients in food processor and cut in butter. Add water and yeast, 1 whole egg, and the second egg yolk. Mix until the dough forms a ball. Continue mixing for one minute, adding flour if dough seems sticky. Let dough rest.

Butter a 9″ round cake pan. Divide the dough into 16 equal pieces. Roll each into a ball and arrange in the pan, sides touching. Whisk the remaining egg white until foamy and brush over the rolls. Sprinkle with sesame or poppy seeds. Cover rolls with a damp tea towel or plastic wrap.

Let rolls rise for about 15 minutes. Heat oven to 425°. Bake 15 – 20 minutes. Remove immediately to a rack to cool.
