Mom’s Lowfat Granola

8 cups rolled oats (not quick-cooking)
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon grated nutmeg
1 cup pure maple syrup
2 cups (10 ounces) raisins
1 cup (4 ounces) chopped nuts (I use pecans)

Preheat the oven to 350°F. Oil a large flat pan with a flavorless oil. Mix the oats, salt, cinnamon, nutmeg, and syrup together, and spread on pan.

Bake for 10 minutes, then stir. Bake an additional 10-15 minutes.

Add the raisins and nuts. Cool, and store airtight in the refrigerator.

This is the granola recipe my mom makes, and it is delicious! I think she got it from a cookbook called “Vegan Delights”.
