Oatmeal Pancakes

1/2 cup whole wheat flour
1 1/2 cups rolled oats or oat flour
1 Tbsp baking powder
1/4 tsp salt
1/4 – 3/8 tsp ground cinnamon, optional
1/4 – 3/8 tsp ground cardamom, optional
1 egg, beaten
1 1/2 cups milk or soy milk

Note 2022: grind oats into flour before starting recipe. The addition of cinnamon and cardamom was lovely.

Stir dry ingredients together. Add remaining ingredients and stir until well mixed. The mixture improves if it is allowed to sit for an hour or so. More liquid may be required at that point.

Fry on a hot griddle, turning when the edges begin to brown.

Notes:
I like it with quick cooking oats, or with any rolled oats that have been pulsed into flour in a food processor or blender.
