3/4 cup sugar
1/4 cup soft butter
1 egg
1/2 cup milk
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
Mix sugar, butter and eggs thoroughly. Stir in milk. Sift dry ingredients together and stir in.
Spread batter in greased and floured 9″ square pan. Sprinkle with desired topping.
Bake at 375 for 25 – 35 minutes, until a toothpick inserted into the center of the cake comes out clean. Serve warm.
Cinnamon Coffee Cake
Sprinkle top with mixture of 1/2 cup brown sugar and 1 1/2 tsp cinnamon.
Streusel-filled Coffee Cake
Follow the recipe above, except spread only half the batter in the pan. Sprinkle with half the Streusel mixture. Add the remaining batter, and sprinkle the remaining Streusel over the top.

2 Tbsp flour
2 tsp cinnamon
2 Tbsp melted butter
1/2 cup chopped nuts, optional
Quick Apple Cake
Follow main recipe above, except arrange apple slices on top of the batter, pressing slightly into the batter. Sprinkle the top with 1 tsp cinnamon mixed with 2 Tbsp sugar.
Blueberry Buckle
Follow the main recipe above, except use 2 cups flour. When batter is ready, stir in 2 cups well-drained blueberries. Sprinkle the top with mixture of:
1/2 cup sugar
1/3 cup white flour
1/2 tsp cinnamon
1/4 cup soft butter
Bake 45 to 50 minutes.
Orange Coffee Cake
Follow the main recipe, except use orange juice for half of the milk, and add 1 1/2 tsp grated orange rind. Sprinkle the top with a mixture of:
1/2 cup sugar
1/3 cup white flour
1/2 tsp cinnamon
1/4 cup soft butter
1 1/2 tsp grated orange rind
Pineapple Coffee Cake
Follow the main recipe. Spread the top of the batter with a mixture of:
2 Tbsp softened butter
2 Tbsp honey
1/2 cup well-drained crushed pineapple
