Brownies by Charles

1/2 cup unsalted butter, melted
1 tbsp cooking oil
1 1/8 cups white sugar
2 large eggs
2 tsp vanilla extract
1/2 cup flour
1/2 cup cocoa powder
1/2 tsp cinnamon
1/4 tsp salt

Preheat oven to 350°. Grease an 8-inch square pan with cooking spray, then line with parchment paper.

Combine butter, oil, and sugar; whisk well for one minute. Add the eggs and vanilla; beat well for an additional minute (this creates the crackly top).

Stir dry ingredients together. Fold them into the wet ingredients until just combined. Do not overbeat, or the texture will be more cake-like.

Pour batter into prepared pan, smoothing out the top. Bake for 20 – 25 minutes on the top shelf, until the center of the brownies are just set. A toothpick will not test done.

Remove from the oven and allow to cool to room temperature.

Note: half a recipe bakes nicely in a smaller pan!!

To make Brownie Cookies: Let batter site until it thickens slightly, 5 – 10 minutes. Bake in 350° convection oven for about 8 minutes. Batter will spread. A half recipe makes 10 – 12 cookies. Very good! Do not over-bake.
