Buckwheat Pancakes

1 cup buckwheat flour
1.5 tsp white sugar
1 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1.25 cups buttermilk
1 large egg, beaten
1/4 tsp vanilla extract
Optional:
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp cardamom

Makes 14 small pancakes.

Combine dry ingredients. Beat egg and then combine it with the vanilla and buttermilk (or water if using powdered buttermilk). Mix all ingredients together gently. Let them sit for 5 to 10 minutes to relax.

Cook on a hot griddle as for other pancakes. Serve with peanut butter and bananas for a delicious treat.

2020 Very good. I used 3 tbsp Bob’s Red Mill Powdered Buttermilk, plus about 1 1/4 cups water. I couldn’t really taste the spices, but it may taste flat without them. Try using more? These froze well and were delicious defrosted, eaten plain.

Also try using part oat flour.
