Butterscotch Sauce

4 tbsp butter
1 cup dark brown sugar
1/2 cup half & half
pinch of salt
1 tbsp vanilla extract

Compare with Extra Quick Caramel Sauce.

Melt the butter in the microwave, in a 1-quart bowl or Pyrex measuring cup. Add the sugar and salt; whisk well. Add the half & half bit by bit, whisking after each addition.

Bring the mixture to a boil in the microwave. Stir will. Continue cooking and stirring for about two minutes, watching to make sure it doesn’t boil over. The mixture should be very smooth, and getting thick.

Cool slightly and add vanilla extract.

This is not “caramel” sauce, but a quick substitute. It is good over bread pudding; as a base for sautéed apples, etc.
