Chocolate Buttercream Frosting

1 cup softened butter
3.5 cups sifted powdered sugar
1 cup cocoa powder (I prefer Saco)
2 tsp. vanilla extract OR 1 tsp. almond extract
1/4 – 1/2 cup whipping cream

Cream the butter until fluffy. Sift the sugar and cocoa into the mixing bowl. Mix carefully until incorporated.

Add extract and 1/4 cup cream. Beat at medium speed for several minutes. If the consistency is too stiff add more cream, a tablespoon at a time and beat well after each addition.

For a small amount:
3/8 cup powdered sugar
2 tbsp cocoa
2 tbsp butter
1/4 tsp vanilla or 1/8 tsp almond extract
a bit of cinnamon
up to 1 tbsp cream or 1/2 & 1/2
