Crust:
2 cups flour
1/2 cup butter
1/4 cup brown sugar
Filling:
2 cups brown sugar
3 eggs
1/2 tsp salt
1 cup shredded coconut
1/2 cup raisins
1/2 cup chopped pecans
1 1/2 tsp grated lemon rind
3 tbsp lemon juice
Combine flour, butter and 1/4 cup brown sugar. Press into 9 x 13 pan. Bake at 350° for 10 minutes.
Mix the filling ingredients and pour over baked crust. Bake an additional 20 – 25 minutes. Cool and cut into small squares.
Makes 70 small pieces.
