1 cup butter
1 cup brown sugar
½ cup white sugar
1 egg + 1 yolk
1/3 cup molasses
2 t. grated fresh ginger
¼ cup chopped crystallized ginger
2 cups + 2 T. flour (whole wheat pastry flour is fine)
2 t. ground ginger
1 t. baking soda
¾ t. salt
Cream butter and sugars, then add eggs and beat until blended. Mix in gingers. Mix dry ingredients together. Add to butter mixture and mix until blended. Form into balls, then roll in sparkling sugar. Place on parchment covered baking sheet.
Bake at 350°F for 10 minutes.
