Corn Bread

From Fit for Life … delicious, tender.

1 cup medium grind corn meal OR 3/4 cup corn meal plus 1/4 cup oat bran
1 cup whole wheat pastry flour
3/4 tsp kosher salt
1 tsp baking powder
1 tsp baking soda
1/8 cup maple syrup
1 egg, beaten
1 1/2 cups buttermilk
1 tsp butter, for greasing the pan

Note: this recipe does not work using powdered buttermilk!

Preheat oven to 375° (or 350° if using a Pyrex baking dish). Combine dry ingredients. Stir in liquid ingredients. Do not over-mix! The batter will be a bit lumpy. Let the batter sit for a few minutes to absorb some of the liquid.

Pour the batter into a well-buttered 8×8-inch pan. Bake for 30 minutes, until it tests done.

Cool slightly before eating.

2024 Edited after having several failed batches: decreased amount of buttermilk from 1 7/8 cups; also decreased 1/4 cup honey to 1/8 cup maple syrup.
