Classic Baked Custard

1 quart milk
2/3 cup sugar
¼ teaspoon salt
4 eggs
1 tsp. vanilla
Nutmeg

Preheat oven to 325°F. Bring kettle of water to boil. Bring milk to scald in microwave.

Mix eggs with electric mixer. Add sugar, salt, and vanilla. Pour hot milk in gradually, while stirring. Pour (or strain) into custard cups set in a large baking pan.

Grate nutmeg on top of custards. Pour boiling water in pan around base of custard cups.

Bake until slightly set in middle – depends on temperature of milk you are starting with. Could be 20 minutes or so, up to an hour. Chill.

Note: Delicious with about ¼ of the milk replaced with half & half.
