Cuban Flan

Caramel

3/4 cup sugar
1/4 cup water

Cook sugar and water together until golden brown.

Using a 9″ mould, warm it and then pour the caramel in and swirl it around to coat the mould.

Note: This is fun to make in individual moulds also … I get 5 individual dishes of flan from this recipe.

Custard

2 cups milk
1 lemon peel
1 cinnamon stick
1/4 tsp. salt

Combine ingredients and bring them to a boil. Set aside to cool a bit.

3 whole eggs
3 egg yolks
1/3 cup sugar
1 tsp. vanilla extract

Beat eggs with sugar and vanilla extract until mixed. Pour into cooled milk. Strain the custard into the prepared mould(s).

Bake in a water bath in the center of a 350° oven, for about an hour (for one large mould).

When cool, invert custard onto serving tray.
