Plum Crisp

Topping:
1/3 cup flour
1/3 cup rolled oats
1/3 cup brown sugar
1/2 tsp cinnamon
4 tbsp butter
1/3 cup chopped pecans, optional

Fruit:
6 cups pitted and quartered fresh Italian prune plums
1 tsp cornstarch
3 tbsp white sugar
1 tbsp grated ginger root (optional)
2 tbsp liquid (cream, fruit juice, water)

Combine topping ingredients except for nuts in a food processor to mix well. Add nuts and chop briefly.

Combine sugar and cornstarch, then add to all fruit ingredients.

Pour fruit in an 8×8 or equivalent baking pan. Top with topping. Bake at 375 degrees for about 35 minutes.

Serve warm or at room temperature. It’s good with ice cream!
