Limeade

1 1/2 cups sugar
1 1/2 cups water
1 cup fresh lime juice

Make a simple syrup by boiling the sugar and water together. Cool. Add syrup to lime juice. This makes a limeade concentrate.

To make limeade, add 2 cups of chilled water to each cup of concentrate. Serve over ice.

Ginger Limeade

Replace 1/3 of the simple syrup with an equal quantity of syrup made by boiling equal parts sugar and water, plus a generous quantity of grated fresh ginger, for an hour or more. The more ginger the better! Strain and cool before using.
