Easy Summer Cake with Fruit

Half Recipe:

1/4 cup sugar
1/4 cup butter, salted
1 egg
1/2 tsp vanilla extract
1/8 cup cornmeal
3/8 cup flour
1/2 tsp baking powder
pinch of salt
cinnamon
fruit: thinly sliced pears, plum halves, berries
sugar for sprinkling over top

Butter a 9 x 5 cake pan, or something that approximates 45 square inches.

Cream the butter and sugar together. Add the egg and beat until fluffy. Add the vanilla extract.

Combine the dry ingredients and add to the work bowl. Mix until combined.

Scrape the batter into the prepared cake pan.

Add fruit to cover the top thinly. Sprinkle with sugar if desired.

Bake at 350° for about 30 minutes, until the batter in the center is baked. Cool slightly and eat warm.

2025 Delicious with sliced pears (I did not peel them). Try cornmeal and whole wheat pastry flour next time.

Note: for a full recipe double the ingredients, using 1/3 cup cornmeal and 2/3 cup flour. Use an 8×8 or 9×9 square pan, or a pie pan or something similar.
