Start with:
olive oil
half of a large onion,chopped
While onions are cooking, prepare various vegetables, then add to pan:
cabbage, carrot, celery, etc.
Add herbs to taste:
celery seed, thyme, sage, oregano
salt
water
Add starch that cooks in 15 minutes or less, such as:
pasta
quick-cooking barley
red lentils and quinoa in equal portions
Two minutes before starch is cooked, add:
chopped kale or spinach
When the soup pot comes off the heat, add a cup or so of frozen green peas to help stop the grain from cooking further.
Add if desired:
1 7-ounce can of tuna, including liquid
This is infinitely customizable, quick, and delicious.
