Fresh Pasta

1 1/4 cups very fine semolina (6 oz.)
2 large eggs
1/2 tsp olive oil
Pinch of salt

OR

1 1/4 cups whole wheat flour
3 large eggs
1/2 tsp olive oil
1/3 tsp kosher salt

Process all ingredients in a food processor, until the dough forms a ball, then continue to process until the ball is kneaded and smooth, about 60 seconds. Roll and cut with pasta machine. Makes 10 ounces.

2022 whole wheat version, delicious when cut thin.
