Dried Montmorency Cherries

40 ounces pitted pie cherries

Cherries are less tangy if they have been frozen and defrosted before drying.

Once defrosted, place cherries and their juice in a large strainer. I use my pasta cooking pot with the strainer insert. DO NOT RINSE! Take handfuls of the defrosted berries and squeeze to remove as much liquid as possible.

Place cherries on dryer racks, not touching at all.

2018: I used 40 ounces frozen berries. After thawing and squeezing, I had 20 ounces cherries left. They fit on three of my dryer racks. Dryer set to 135°. Some cherries were dry in 9 hours; some took 12 hours. Very sour!
