4 large tomatoes
3 cups tomato juice
1 tbsp red wine vinegar
1/2 tsp salt
1 tsp paprika
1/4 cup canned diced green chilis
2-4 drops hot pepper sauce
sugar to taste
2 green onions, slice
1/2 medium cucumber, peel and shredded
1/3 cup diced green bell pepper
2 tbsp garlic or plain crouton, for serving
Scald the tomato skins and slip them off. Core the tomatoes; cut them in half crosswise, and remove the seeds. Dice the tomatoes
Using a large bowl, stir together the diced tomatoes, tomato juice, vinegar, salt, paprika, and green chilies. Add hot pepper sauce and sugar to taste. Stir in the green onions, cucumber and bell pepper.
Cover and refrigerate at least four hours. Serve with croutons.
