1 lb sweet potatoes, peeled and cut in 1/2″ cubes
1 1/2 cups frozen petit green peas
1 tbsp olive oil
1/2 cup chopped onion
1/2 tsp minced garlic
1/2 tsp grated ginger root, optional
1/2 tsp powdered mustard
1 1/2 tsp curry powder
1/2 tsp salt
pinch of ground red pepper
Cook the sweet potato cubes in boiling water until soft, 5 – 8 minutes. Drain (reserve liquid to use as needed to add moisture if needed). Mash coarsely and then add frozen peas.
Heat the oil in a skillet. Add the onion, garlic and ginger and saute’ until soft. Add the mustard and curry and continue cooking for two more minutes. Add this mixture to the sweet potatoes, along with the salt and pepper.
Reheat as needed.
2020 Fast and easy, very good. Not sure the peas add anything notable here.
