Jenny’s jalapeño cheese squares

10 ounce jar of mild Jalapeño peppers
6 very well-beaten eggs
1 lb. shredded sharp cheddar cheese

Preheat oven to 350°. Butter an 8×8-inch baking dish with butter.

Drain the peppers and dice them into small pieces. Spread them evenly in the bottom of the baking dish. Spread the cheese evenly over the peppers. Finally, pour the well-beaten eggs evenly over the peppers and cheese.

Bake for 30-40 minutes, until set in the middle. When cool, cut into squares.

A double recipe works in a 9×13-inch dish.

These freeze well; thaw and heat for about 15 minutes. They are best served warm; use a hot tray, or warm in a slow oven.

2023 These are somewhat salty. Rinse the peppers? Use less salty cheese?
