Margherita Pizza

1 pound pizza dough
1 cup chopped or sliced Roma tomatoes
5-6 ounces mozzarella
8 fresh basil leaves, whole or cut in thin strips

Preheat oven to 500°F.

Shape the dough, pressing and stretching to a 14″ round. Place on a pizza stone or a baking sheet covered with parchment paper.

Arrange tomatoes on top of pizza crust. Top tomatoes with cheese slices. Sprinkle with salt (optional) and drizzle with olive oil (optional).

Bake 8 – 10 minutes, or until the edges and cheese are golden brown. Remove pizza from stone or pan and cool slightly on a rack. Brush the edges with oil and sprinkle the pizza with the whole or chopped basil.
