4 sweet potatoes
2 tsp jalapeño powder
4 strips bacon, cooked until crisp and chopped
1/2 cup coconut cream
Salt and pepper to taste
Preheat the one to 400° F.
Place the sweet potatoes on a baking sheet and add to preheated oven. Cook for 40-45 minutes or until the potatoes are fork tender.
When cool enough to handle, cut the sweet potatoes in half and scoop the inside into a bowl. Mash with a potato masher.
Add the coconut cream and jalapeño powder. Stir well to combine. Fold in half the bacon. Season with salt and black pepper to taste.
Transfer the potatoes to a serving bowl and garnish the top with bacon.
