Note: I last made this in October 2022 and did not like the dressing. It was much too sour and thin.
Dressing:
2/3 cup lowfat buttermilk
1/4 cup grated parmesan cheese
1 tbsp lemon juice
1 tsp anchovy paste
1/2 tsp Dijon mustard
1/4 tsp pepper
1 clove garlic, crushed
Main salad ingredients:
10 ounces Romaine lettuce leaves, torn
2 cups chopped tomatoes (Roma)
3/4 cup croutons
Grated black pepper
Serves 4.
Fun to add to make a meal:
Additional parmesan cheese
Albacore tuna
Garbanzo beans
Cucumber
Lightly steamed green beans OR hashed broccoli (cold)
Hard boiled eggs, cut in half
This can all be prepped ahaed to make an easy company dinner. Good served with cornbread.
