Mother’s Day Salad

spinach
mizuna
asparagus, cut in 1″ pieces
frozen green peas
finely chopped red onion or shallot (scant)
various colors of grape tomatoes, halved
———
feta cheese
———
good quality olive oil
cider vinegar or lemon juice
fresh tarragon
salt and pepper

Bake asparagus pieces for 8 minutes at 400°.

2021 Half the volume of the salad is in the vegetables, half in the greens.
