Multi-Grain Waffles

Made without sugar, cinnamon, and vanilla, these are a good option for savory accompaniments, such as sausage gravy, eggs, etc. The original recipe is from Eating Well.

2 cups buttermilk
1/2 cup old-fashioned rolled oats
2/3 cup whole-wheat flour
2/3 cup all-purpose flour
1/4 cup toasted wheat germ or cornmeal
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large eggs, lightly beaten
1 to 4 tbsp vegetable oil

If desired, add:
up to 1/4 cup brown sugar
2 tsp vanilla extract
1 tsp ground cinnamon

Mix buttermilk and oats in a medium bowl; let stand for 15 minutes.

Whisk dry ingredients together. Stir eggs and oil into the oat mixture. Add the dry ingredients; mix with a rubber spatula just until moistened.

Coat a waffle iron with cooking spray and preheat. The first waffle took 4 minutes in my waffle iron, set on 3.5. The remaining two waffles were done in 15 seconds less.
