Panna Cotta

2 tbsp water in shallow bowl
1 tbsp granulated gelatin

Sprinkle gelatin over the water in a flat bowl or small rimmed plate.

4 cups milk products
5 tbsp sugar
3/4 tsp vanilla extract

Milk, cream, buttermilk, half-and-half, sour cream. Butterfat should equal 20 to 25 percent. Typical components would include 2 cups whipping cream, and 2 cups of the other suggestions to make up 23%.

Bring milks and sugar to a simmer. Add the softened gelatin. Heat and stir until the sugar and gelatin are completely dissolved. Add the vanilla extract.

Cool the mixture, then measure it out in 1/2 cup servings into oiled custard cups (if you plan on unmolding them). Otherwise skip the oil.

Chill for about four hours minimum. This is good served with fresh fruit or a light fruit sauce. Lemon curd?
