Note: use 3/4 tsp gelatin per cup of liquid.
2 1/2 cups heavy cream
1 1/2 cups whole milk
5 tbsp sugar
1 tbsp gelatin, softened in 2 tbsp water
1/2 tsp vanilla extract or even better, vanilla bean paste
Goal for fat content: 18-23%
Heavy cream = 36%
Half & half = 12%
Whole milk = 3.25%
