Serves 4
2 medium fresh pears
8 leaves bibb lettuce
2 tbsp crumbled blue cheese
Wine dressing:
1 tbsp vegetable oil
1 tbsp white wine
1 tbsp white wine vinegar
1/2 tsp grated onion
salt and pepper to taste
Quarter each pear lengthwise Remove the core; thinly slice each quarter from top to bottom.
Arrange two lettuce leaves on each of four salad plates. Fan pear slices on the lettuce. Drizzle with 2 teaspoons of wine dressing for each salad. Sprinkle each with 1/2 tablespoon of blue cheese. Serve immediately.
For the dressing: Add all ingredients to a small jar and shake vigorously for 15 seconds. Strain out the onion if desired. Adjust salt and pepper if needed and shake again.
