4 ounces butter (113 grams)
5.5 ounces sugar (149 grams)
1 tsp baking powder
1/2 tsp salt
2 eggs
1 tsp vanilla extract
120 grams flour
2 cups Italian Prune-Plum halves (346 grams, about 12 prunes)
2 tbsp sugar mixed with 1 tsp cinnamon
Grease an 8 or 9-inch square pan, or a 9 or 10-inch round pan.
Beat the butter, sugar, baking powder and salt together.
Add the eggs and vanilla and mix well.
Add the flour and mix briefly. Spread in the pan.
Cut the prunes in small wedges and decorate the top of the unbaked cake with the prune pieces. Sprinkle the cinnamon sugar over the top of the fruit. Bake at 350° for about 30 minutes.
2018 – I baked this in the toaster oven in an 8″ round pan, and it took 43 minutes. Delicious!
