Pork Roast

Pork loin or other boneless cut
Olive oil
Spices and herbs (sage, thyme, rosemary, oregano — fresh if possible)
Salt, pepper

Rub pork with olive oil. Generously rub with seasonings. Let it sit for 2-24 hours (refrigerated).

Pull pork out of the refrigerator a minimum of two hours prior to baking it.

Preheat oven to 400°. Place pork FAT SIDE UP on a roasting pan. Bake 10 minutes at 400°.

Turn the oven down to 350° and bake until the meat reaches an internal temperature of 142-145°. It takes about 20 minutes per pound.

Remove the roast from the oven and let it sit for 10 to 15 minutes before slicing.
