Potato Soup

10 ounces bacon, diced (optional)
2 tbsp butter
3 stalks celery, chopped fine
1 large yellow onion, chopped fine
1 large carrot, peeled and finely chopped
kosher salt, black pepper
3 lbs. yellow potatoes, diced in 3/4″ cubes
1/4 tsp dried thyme
1/4 tsp smoked paprika
1/8 tsp cayenne pepper
4 cups chicken or vegetable broth
1/2 cup or more heavy cream, to taste

Cook as expected for a soup (bacon; then add veggies; then potatoes and spices; then broth).

Blend with immersion blended to desired consistency.

Ad heavy cream before serving.
