1 tube pre-cooked polenta (Trader Joe’s)
1 – 2 cups spaghetti sauce
4 ounces fresh mozzarella cheese
Preheat oven to 350°. Slice the polenta in 8 – 10 rounds. Place on a greased baking dish. Bake for 10-15 minutes, until top is crispy. You can turn it if you like. Heat the spaghetti sauce while the polenta bakes, and slice the cheese.
When the polenta is starting to brown, cover it with the hot spaghetti sauce, then top each round with a slice of cheese.
Place under the broiler until the cheese is melted.
