olive oil
chopped onion
well-chopped carrots
chopped cabbage
chopped celery
1/2 cup washed quinoa
water to cover
1/2 tsp or more salt
cumin powder
red pepper powder
oregano
chipotle chili powder
1 cup marinara sauce, or tomatoes
1 can refried beans
Add ingredients in the order given. Stir-fry veggies, add quinoa and water and boil 15 minutes. Add herbs, tomato sauce or tomatoes, and beans. Stir well. Optional: blend in whole or partially as desired.
