Quick Veggie-Protein Meals

Veggies with Salmon
1 small eggplant, cut in 3/4-inch cubes
1 cup raw broccoli slaw (Trader Joes)
2-3 cups raw chopped kale (Trader Joes)
3 ounces canned salmon
Tamari sauce to taste
Oil for sautéing
Water for cooking

Cook eggplant for about 10 minutes in olive or avocado oil. Add broccoli slaw and continue cooking. Add water as needed to add steam and soften vegetables more quickly. Add kale and cook to wilt. Add tamari sauce to taste; add salmon and heat gently.

2020 Yummy, would prefer not using eggplant, but it was fine.

Veggies with Garbanzo Beans
Green beans
Yellow summer squash
Gochujang sauce
1/3 cup tomato sauce, preferably home-made
Oil for sautéing
Water for cooking
1/2 can rinsed and drained garbanzo beans

Par-boil trimmed and cut beans for 3 minutes. Cook squash cubes in oil. Add beans when squash is almost done. Try to get them a bit brown as they cook. Add scant tsp Gochujang sauce. Use water as needed to steam and finish cooking. Add 1 portion home-made tomato sauce (about 1/3 cup). Mix well, then add rinsed garbanzo beans and heat through.

2020 Delicious. Note: use whatever veggies are on hand.

Refried Bean Soup
Onion, carrot, celery, etc.
Oil for sautéing
1 can spiced refried beans (Trader Joes is good)
Water
Cumin, thyme, a bit of salt
Kale

Sauté vegetables in oil. Add beans and thin to soup consistency with water. Adjust spices. Cook for 15 minutes or so until vegetables are done. Add chopped kale and cook an additional 5 minutes.

2020 Delicious.
