1 large orange
2 cups fresh blueberries
1 medium red or green eating apple, diced
1/2 cup chopped scallions
2 Tbsp. chopped basil
1/4 cup red wine vinegar
2 Tbsp. + 1 tsp. apple juice
2 1/2 Tbsp. extra-virgin olive oil
2 1/2 Tbsp. sugar
1/8 tsp. salt
10 oz. spring mix (tender baby greens)
3 oz. crumbled Gorgonzola cheese
cracked black pepper for garnish (optional)
Peel and section orange, then cut in small pieces. Add to a large bowl, along with blueberries, apple, scallions and basil.
Whisk dressing ingredients together in a small bowl: vinegar, apple juice, olive oil, sugar and salt. Pour dressing mixture over blueberry mixture, stirring gently to coat; let stand 10 minutes.
Arrange salad mix on six salad plates. Top with blueberry salsa, then sprinkle each salad with cheese; add freshly cracked pepper if desired.
