2 ripe avocados
spritz of lemon juice
1 bag of baby spinach
2 pomegranates
candied walnuts or pecans
Raspberry Vinaigrette
Slice 2 avocados into sections. Create a ring around your serving dish using the avocados. Next, pile the spinach leaves in the center of the dish. In the very center, place the pomegranate seeds. Sprinkle the salad with candied nuts.
When ready to serve, drizzle with Raspberry Vinaigrette.
Raspberry Vinaigrette
1 cup fresh or frozen raspberries
1 Tbsp + 1 tsp sugar
1/4 tsp salt
1/4 – 1/3 cup balsamic vinegar
1/4 cup olive oil
Heat the raspberries until they release their juice. Push through a strainer to remove seeds.
Add all ingredients together, adjusting to taste.
