1/4 cup olive oil
2 tbsp Balsamic vinegar
1 tsp ground cumin
1 15-oz can Great Northern beans, rinsed and drained
1 15-oz can black beans, rinsed and drained
3 celery stalks, chopped
2 cups frozen corn kernels, thawed
1 medium red bell pepper, chopped
1 cup chopped green onion
1/3 cup chopped basil
4 oz can chopped green chilis (mild)
Whisk oil, vinegar and cumin together. Add remaining ingredients and toss to coat. Season with salt and pepper to taste. Let the salad stand at least an hour to blend the flavors.
Serves 8.
2023 Used 1/8 cup oil, 3-4 tbsp balsamic vinegar, 1/2 tsp salt, and 7 oz canned chopped chilis.
