1 cup grated zucchini
2 tsp olive oil
2 tsp butter
1 egg
Tabasco sauce
salt and pepper
Saute’ the zucchini in the oil and butter for a minute or two, until it is wilted. Mound it in a bowl so it stays warm while you cook the egg.
Add a bit more butter to the pan and fry the egg to your taste. Add salt and pepper.
Splash some Tabasco Sauce on the zucchini, then add the egg on top. Delicious! Also good with sliced or chopped tomatoes.
