Teff Flour Pancakes

1 1/2 cups teff flour (can substitute spelt flour)
1 tsp baking soda
1 tsp cream of tartar
1/2 tsp salt
1 1/2 cups milk or water
2 eggs, optional
1 tbsp vegetable oil
2 tsp maple syrup (optional)

Whisk the dry ingredients together.

Beat the egg (if using) and add the other wet ingredients to it. Pour this mixture into the flour mixture, and whisk until just combined. Don’t beat or overmix.

Cook on a not griddle or skillet. Cook until the tips are bubbly and edges are brown. Turn and cook until light brown.

Note: These are very easy, nutritious, and delicious. They are even good plain, with no toppings. Bob’s Red Mill packages Teff Flour. A half recipe made 8 pancakes on my square griddle. 2018
