Thanksgiving 2020

Lots of fun recipes!

Food Network: Skillet Turkey with Roasted Vegetables
Easy, quick, delicious. Used about twice as many mushrooms. Vegetables were very good, turkey moist and perfectly done (25 minutes total, 2 lb turkey breast). With the drippings plus 1 cup chicken broth, I made a passable “turkey” gravy.

Cranberry Custard Pie

Cranberry Curd Tart
Changes I made:

  • I used the Classic Tart Dough recipe, from Cook’s Illustrated, see page 730.
  • I thought the cranberry curd was a bit bland, so I added 2 Tbsp lemon juice, 1/4 tsp salt, and 2 tbsp whipping cream. This is in line with my favorite lemon tart recipe (Cook’s Illustrated) that calls for whipping cream.

Maple-Pecan Galette With Fresh Ginger
Very good, I especially like it at room temperature. This spreads out A LOT … perhaps keep the galette concept but put it in a 9″ cake pan or pie plate to contain it. Add lemon zest! 1 tsp finely chopped. Serve with whipped cream.
