Vanilla Pudding

1 1/2 cups rich milk
1/4 cup sugar
1/4 tsp salt
3 tbsp flour
1 egg, or 1 egg yolk
1 tbsp butter
1/2 tsp vanilla extract (plus? or use vanilla paste?)

Combine the sugar, salt and flour in a small saucepan. Whisk to blend. Slowly add 1/2 cup milk and whisk until smooth.

Heat remaining 1 cup milk in microwave until just boiling.

Whisk egg in separate small bowl.

Blend the hot milk into the saucepan and whisk well. Heat gently until mixture boils. Be careful, the bottom of the pan can easily burn at this point. Cook at a gentle boil for two minutes to cook the flour.

Remove from stove and stir a bit of the custard mixture into the egg and stir well. Mix the egg/custard mixture back into the pan and whisk well.

Continue cooking gently until the pudding begins a slow boil. Boil for one minute, stirring constantly.

Remove from heat and add the butter and vanilla extract.

Pour into custard cups and cool. Makes 3 servings.

2021 Used part Half & Half, it was very good. More vanilla would be better!
